With an abundance of tomatoes in my garden, I have been preparing coulis and pasta sauce. As cheesemaking season nears its end, I am also making the most of the delicious chèvre from Mas Coste. I was inspired to make cannelloni stuffed with courgette (garden), fresh goat’s curd and basil, topped with coulis and tomme de chèvre…

Using seasonal garden produce… the filet mignon is stuffed with fresh figs, wrapped in Serrano ham and baked with apples (straight from the tree) and cloves.

Wednesday 9th September. Enthused by recent jam-making, I stopped and picked blackberries on the mountain pastures this morning, much to the amusement of the cows who stood and watched me. The season is finishing – I have just enough to freeze for winter tarts.

As I am still cooking tomatoes to save for winter months, making coulis, pizza appeared on the menu again. Little hands helped squish the dough and a hungry beak opened to indulge in the finished result… hard to imagine ever ‘ordering a pizza’ after the delights of ‘homemade’…

Wednesday 16th September. Gale force winds all night and incredible gusts today. At 7am it was 25°c: the wind was hot as I stepped outside, blowing from the south, Spain.
